Slime molds (or if I got the phrase wrong, I am thinking big, multi-cellular amoeboid thingies here). IMO they would be useful in underwater environments, also have limited shapechanging abilities (not like mimicking other critters, but forming tentacles and other appendages for example). They could be used for bio-tech equipment, host armor, maybe even sortof a war mount (definitely not for ride, but thats not in the definition anymore, is it?)
Splicer creations that mimic real, natural animals. I know about the Falcon, but I am thinking mainly host armor here. (I suppose that would mean quadruped host armor also, since its hard to do otherwise)
Here's one that I designed awhile back but haven't written any rules or back story for yet.
Single cell macro-organisms used in the construction of an underwater haven. They form a large semi-clear dome most of the time but are able to change the coloration of their cell walls to act as a sort of camouflage.
