Indian and African elephants apparently have some specific mutations... high-level pure-breeds, I'm guessing.

Correct. The Ganesh and Donta Purebreeds are suppose to be rather powerful. They are referred to in AtB (2001) and it is stated that stats will appear in a future book. But it's been *seven* years...
I'm reluctant to wish to see these stats in print, the Ganesh should have been put into Rifts, not AtB.

Every setting needs a Top Dog, or in this case a Top Elephant. I do want AtB stats. Mostly because I prefer AtB to Rifts.
The Ganesh may not be as bad-ass as the book makes. They most likely have a weakness that they hide from the rest of the world. Such as a blinding fear of mice...

I was doing some research and found that there is a legendary creature from African mythology called the Chipekwe, or Irizima, which is supposed to be some giant elephant killer.
I'm sure both the Ganesh and Donta would be pretty fearful if this creature were around.

Yeah, I heard about that creature. It's supposed to be some sort of Triceratops (or at least in that family) and Extremely territorial. I even seen a pick of is somewhere (can't remember where though). I think it might be on here: www.newanimal.org , for those who are interested. Who knows, maybe someone could come up with some pretty decent mutants based off of them *shrugs*.

I saw one site that had a picture of a Tric next to the article, maybe that's what you're thinking about. Though it would be a great way to bring the Triceratons into a game. Consider if the Ganesh were aliens related to the elephants and that they were at war with the Trics. Maybe they came to Earth to hide out.

I abhor Rifts for the very reason that it's too detailed.
The top dog of AtB was traditionally the EoH, but that's just not the case anymore with AtB2.
