Canon items missng from the RPG
Here is a list of alien races, ships, mecha, and space fighters which appear in either the original 85 episodes, Robotech.com (Mecha Comparison and/or Mecha Database), The Art of Robotech (Vols 1 and 2 and The Shadow Chronicles), LLA, tSC movie, ad/or Wildstorm comics that have yet to be detailed in the RPG. I assume a fair amount of these will be covered in the Marines book, in addition to MOSPEADA destroid designs that were not used in animation (related to the Tiger Destroid).
Note: I did not include anything from the Art of Robotech: Vol 3 Sentinels, Sentinels movie, or Robotech the movie since they have all been moved to secondary canon.
Did I miss anything?
Zentraedi
Dolza’s Fortress
Zentraedi Quiltra Queleual class Carrier
Zentraedi Queadol Magdomilla class Command Ship
Zentraedi Gun Ship
Zentraedi Scout Ship
Masters
Tirolian Heavy Cruiser
Sian Dereta ship (I included this because the Art of Robotech: The Shadow Chronicles clearly states the original hull of the SDF-3 was to make the ship appear to be Tirolian...so it had to be a ship that resembled the SDF-3 hull design depicted in AoR:tSC).
Invid
Invid Command Carrier
Late UEEF vessels
ArkAngel class Colony Fortress
SDF-3 Pioneer (2044 refit)
Crusader Class Dropship
Horizon-V class Dropship
Super Shadow Beta
Super Shadow Alpha
Garfish Science variant
Mid UEEF vessels
Shadow Drone
Tokugawa class Battleship (2043 refit)
Bioroid Interceptor (command variant)
Early UEEF vessels
SDF-3 Pioneer (original exoskeletal hull)
Tokugawa class Battleship (original hull design)
“SF-6 Vulture” / Carpenter/Hannibal fighter
“AF-4 Volcano” / Wolfe fighter
Mini-Monster MAC III
Tiger Destroid
Southern Cross
“Geneva/Battle/Defender” Cruiser
UEDF vessels
Yamato Class Transport

There are some other units that so far only appear in the ROBOTECH Rpg Tactics game so are probably considered secondary cannon.

Also forgot:
Karbarrans, Praxians, Garudians, Spherians, and Perytonians, all of which were shown in Prelude of the Shadow Chronicles. Karbarrians were essential in rebuilding the UEEF fleet and refitting the SDF-3.

Re: Canon items missng from the RPG
TMS Saga:
the roving Cola, Camera, and Telephone 'bots on the SDF-1/Macross Island
Ep1 Air show might also have a few designs at the air show as "filler"
There are some AE level Destroids in "Broken Heart" that they could do something with.
There is also a shot or two that looks like a Spartan w/Tomahawk arms being present in the same episode.
TRM Saga:
A third repeatable configuration for the Sylphid fighter's wing (it has 3 wing designs each distinct in the animation).
There are a few support vehicles from the 1E Sentinels RPG that can be seen in various TRM episodes IINM
NG Saga:
Maxwell's Drone Aircraft
Point K wreckage could reveal another fighter or two, plus another Alpha model (thing has a big bulging head suggests to me that has more powerful sensors in that dome)
It might be interesting to see official stats and such for things the RPG mentions:
Early version of the Unicorn PA (combat version)
VF-X-5 Prototype
VF-X-7 Prototype
VR-01x/02x series Cyclones
More inferred than stated, but the VM-9's precursors (VM #s 1-8)

The Fan Jets (both the modified aerobatics version Rick flies in on, and the one Minmei wins in the Miss Macross pageant.
At least four different conventional tanks, One in the art break monolog for Macross (Dark or Black Knight?), one in art break monolog for New Generation (The Highlander?), and two that make brief appearances in the series (The Tornado and the Anaconda?).

Macross Saga:
*DL-88 Truck---It's seen first in the plundering of Mars Base, and later appears frequently as a heavy hauler throughout the SDF-1.

Lancer's/Yellow Dancer's jeep from when he first showed up.
I know it is a little extreme to advocate the death penalty for stupidity...but can't we just remove all the warning labels and let nature take it's course???

There's at least one; it's been called by some fanworks the 'Mastiff'. We see a rear 2/3rds view of it, showing it has swept wings, twin tail fins, and honking big engine thrusters.

Actually I think that's either in the Genesis Pits book or the New Generation book.

They have Lunk's jeep(M-70 Kodiak) in the NG Sourcebook. There's an ST-10 Sandstorm UTV in Genesis Pits that might be Lancer's(didn't it have roll-bars?).

Re: Canon items missng from the RPG
While not technically hardware related, would the TRM saga alien animals count (the "dog" Dana encountered when she was on the run from the GMP in the 2nd ep of the arc, and then the bats at the Mounds)?
Lancer's vehicle has roll bars, so did Wolf's, the main differences:
-IINM though is that Lancer had a pair of lights mounted to the roll bar cage
-Lancer's jeep though appears to have what amounts to a "cab" or cover mounted over where the rear seats would be
-Lancer's vehicle also has a different set of geometry than Wolf's or even the VM-9 Silverback. I don't recall anything that would be a close approximation.
However I do think that you could probably use Wolfe's jeep (if nothing better comes along), and put the differences down to cosmetic/body for the time being.

Missing is also the attack helicopter in the Global War flashback in Booby Trap (which is not a Comanchero).
Edit: Other stuf stuff I think no one mentioned yet: The VF-X-6 Genia and the YF-1 with experimental boosters (From the Stars, Wildstorm).
Edit 2: Also remembered all the different drones the Tirolians got: The Triumviroid drones, the security/surveillance drone, the and repair drones.

I have all three in fact - Transport, Gladiator and Battloid.
Edit: Oh, wait. You mean the other version. As far as I know, it would be exactly the same in Gladiator and Transport modes as the Spartas.

triumveroid wasn't a drone.. it was piloted. in the scene you can see the pilots enter. they're basically bioroid cockpits with flight and guns.
personally i'd ignore them.. IMO they were probably supposed ot be a simulator/training type tool, and the master's weren't talking about the flying cockpit craft, but rather whatever innovation allowed the three pilots to act as a single mind.

I watched that scene again and I can't see any pilots entering those things. Unless there are any other scenes than the one at the end of episode 52 which I could have missed? I am aware my assumption of them being drones comes from fan sites, but I do not think we actually know enough about these Triumveroids to know their exact nature. That's why I think it could be interesting to see the them fleshed out. But the thread was about what was missing, not what should or should not be included.

I think the Fan Jets were printed in the RDF Manual? Whichever companion book had the GU-12 in it. Maybe it was the RDF Field Guide? I don't think it was the Training Program book...

Re: Canon items missng from the RPG
honestly, the 1st ed stats could probably suffice in 2nd ed as well. as non-combat units and relatively minor vehicles story wise, there really isn't too much they need stats wise.

also, the OP didn't specify.

True. There are also basic stats for the VF-4 listed on robotech.com and people could (and have) come up with their own stats. In both cases, player 1 and player 2 have two totally different ideas of what those stats should be and when they meet up on the internet (cause honestly, who table tops anymore?), there are differences of opinion. If it were just stated in the current continuity, there is no need for "I think it should be this" which takes up as much time as actually playing the game.

Apologies. I always assume the latest continuity.
I want to see from Palladium:
