Because you rather get the impression Alucard is decidedly jaded; he's been around so long not much surprises him or gets him stimulated. Father Anderson is more of an exciting, if annoying, challenge for him.
Taking on alien armadas might appeal to him in that light; it's something new he's not encountered before, and is something different from dealing with the usual run of undead boneheads or would-be sorcerers, or obnoxious self-righteous ideologues.

Neither have I, but judging from the preview snippets, there's a lot more hand to hand with the aliens this time around, and at least one Big Boss/Queen battle(if the giant alien FOOT coming out of the air and crushing a truck is any indication).
I'm also suspecting we're going to see some retooled American street-gangs with energy weapons taking on aliens...
Thing is, if it's hand to hand against an ancient vampire like Alucard, and not hiding up in orbit and bombing the hell out of everything, the aliens have LOST. A battleship's main batteries are worthless if the neobarbarians are already in among your crew, slitting throats and tearing off heads.

Defected to the Star Force totally, especially after she learned of the other survivors of her species on the Aquarius Ark? Pity, she might have made a more believable turnabout bad guy come the Gatlantis arc coming up. Couple of years hobnobbing with the humans, she'd have been a perfect foil, trading barbs and snarking at Dessler when he came back.

That means the Gatlanteans are either going to be likewise 'misunderstood bad guys'...or they're going to seriously ramp up the mania to make them serious badasses(one critic already compared their appearances as the 'Klingon Empire of the SBY universe'.).

Now here's an almost non sequitur, out of left field, web comic crossover: Essie(the ship's computer from Freefall) meets Carl, the AI from Vexxar....both are sapient ship's computers, both have tried(repeatedly) to kill their captains....
By extension, you have Helix meeting Minionbot...
And, gods help us....Sam Starfall meeting Vexxarr, in all his cnidarian glory.
Vexxarr doesn't have any pockets to pick; Sam is virtually immune to snark-fu.
