The process for players building those things (golems and golem-like) are in the spell descriptions:
Create Golem (1E-pg 90, 2E-pg 214)
Sculpt and Animate Clay (1E-pg 90, 2E-pg 232)
Those spell entries talk about the creation process, base stats of the constructs, and how they change when turned to stone/iron/flesh. Actually, on another check, only the 1E book mentions turning a golem to flesh. 2E sticks with the stone/iron materials.
If you are meaning more of a robotic/clockwork automaton, nothing comes to my mind. Maybe someone else has run across something like that though.

Just from the Palladium Fantasy Main Book (2E) with everything you are looking for (all can be found in the Rifts Book of Magic in MDC world format):
-Golems on pg213-4, these are limited to Iron and Stone. IIRC Crystal Golems are introduced in Island on the Edge of the World Source Book, but that is separate from the Wizard version.
-Zombies on pg212-3 (not so much the Walking Dead Zombie, more like a Voodoo Zombie or a more powerful form of Mummie)
-Mummie on pg210-11
-Animate & Control Dead on pg200, these are temporary and need input from the
-Sculpt & Animate Clay Animals on pg232 when combined with other Elemental Spells can duplicate Golems or Zombies
-Animate (and control) Dead Power Circle on pg149-50, this is specialist mage (Summoner OCC)
-Alchemists (which are NPC only Class, but built upon several PC OCCs but don't state when/how they would learn to make them, so in theory a PC with the right combination of OCC abilities might be able to duplicate them per the GM) also can make Guardian Stones on pg256-7
Rifter 25 has an entire article dedicated to expanding the Golem.
Necromancy from Adventures on the High Seas will also have some spells, though in this case they are more temporary if the spells are basically copy/pasted between PF and Rifts.
A Rifts Techno-Wizard can create a Robotic Horse (Found in World Book 14: New West, crib version in Book of Magic). Technically a TW could create a robot form made to order, but the Glitter Mount Horse just sets precedent in terms of scope of TW reach. This class would require some adaption to bring to the Palladium World (more in terms of available tech than anything else) and would be a GM/Player collab.
