Anything you darn well want, given the instruments at hand. What you refer to as classical music didn't actually exist in our world until we were well after the stage that the palladium world exists in (something around 13th century). We don't have large amounts of music from our world in that time period to go by, though there are small samples available. The ones I have listened to are generally slighty dissonant, without a large number of chords, though they could get into very complex melody/harmony interactions. A lot of pipes and high pitch string, minimum percussion.

I would start by looking at Early Music. Specifically, Medieval and Renaissance music because they represent a fluid continuance which ended abruptly with the Baroque perdiod. Baroque seems, to me anyway, to ... modern (if you can call a period that started, what, 400 years ago modern) for a fantasy setting.

Actually ... it would be more like medieval, folk, or traditional music...
I don't think even the Dwarves or orcs have invented thrash metal yet... you need electricity for that anyway, because without it, you'll never hear the mandolin over the drums ... ( and you don't want to even THINK of making some Iron Maiden or Rammstein stuff of accordion and drums)
