They can roll on the appearance table for aliens or the unusual characteristics for mutants if so desired, but powers, equipment, and alien physiology are replaced by those of the Immortal Power Category.
There you go man, keep as cool as you can.

Being immortal doesn't necessarily make them identical to humans... it just makes them very good at disguising their true appearance if they've been on Earth for quite a while.

The Immortal: Alien/Inhuman is an entirely different sort of character than a traditional alien.
If you want all the abilities, skills, and goodies that come with a normal alien character, then you have to create the character according to the rules for the Alien Power Category. In this way, you could still take the Major super power of Immortality, or make the character a Mega-Hero with Mega-Immortality, and have all the goodies and be immortal.

Enh, there are ways around Mega-Immortals... and it's not always necessary to kill characters in order to neutralize them...

On the one occasion I wrote one (for very limited use), I wrote up an alien as per usual, then added the appropriate Immortal bonuses and stuff. So, The alien appeared as any other member of his race, and possessed the powers and attributes common to his kind, but had the Immortals level of education, special weapon, and other stuff.
Really, not much different from doing the Mutant-Mega-Hero.
I would not personally allow a Mega-Hero Immortal, simply because it's not necessary to combine these two catagories.

The current campaign I'm running:
2 Immortal Demon Lords, 1 male and 1 female;
1 Mega Alien;
1 Mega Symbiote;
1 Mega Impowered;
1 Android;
1 Mega Mutant;
1 Immortal Godling;
and 3 characters still to be rolled up. Probably all Mega's, and 1 thinking of Immortal Human, mabey.
All are evil. The players just got tiered of playing "Hero's" so they are trying to take over the world. LOL!

And how do they plan to do this?
What keeps them cooperating with each other?
We've seen in such epic stories as Marvels' Acts Of Vengence that groups of evil characters just don't work well together in the long haul, especially not when "ruling the world" is at stake. Someone always wants to be in charge, and to quote Highlander, "There Can Be Only One!".
Besides that, if they are the villains, what sort of heroic opposition will you be putting up against them? When they all start near the top of the power scale like that, it becomes difficult to find "major" and "great" menaces for them to fight.

Self-interest, I suppose.

Some of my favorite, most memorable RPG moments have been during player-vs-player campaigns.

In almost every example of PVP I have been involved in personally, it got ugly.
