Yes. It's easy. They turn into a bigger monster that's more powerful.
Not sure what you thought the problem would be?

I can definitely see something monstrous getting "Hulkified" into something more formidable when it gets angry and decides that it needs a bit more power. Like a reasonably human-like "demon" growing in height and bulk and getting bony spikes and horns as it changes into a more battle-proficient form. This could be associated with darkening skin tone, changing eye color and the like, just like the classic Banner/Hulk conversion.

I really like the monster form power, ive created a character with lychanthopy wolf and monster form. A werewolf that gets bigger and badder when really pissed off!

Given that immortal monster's appearance isn't really defined, there's no reason that its normal form couldn't appear nearly human. In this case the Monstrous Form power could be the creature's true form.
Even if the standard form is inhuman, there's nothing to say that the power couldn't still produce a nastier and more powerful form. Another possibility is that the monster embodies two conflicting forces (good and evil, sun and moon, water and fire, etc.), and when one force is dominant, it manifests as the particular bodily form, giving the creature two forms that are equally powerful, but have distinctly different appearances, alignments, and capabilities.
