All covered, but I got the impression based on what Dark Places was saying is that it is more like a person being a firefly that didn't radiate light. IE they are all lit up, but it isn't like it is bathing the sorounding area in light. The cracks, windows, etc is more a case of if you happen to actually walk by it, they'll see that you are all lit up.
I think of it kind of like a thermal camera. When you look at a nice warm person on a thermal camera, they are all 'lit up', but they don't light up the area around them. The books aren't super clear on it, but I remember there being a few examples of hiding behind solid objects is enough to conceal it, but then other talk of needing to cover the cracks in doors/walls/etc to keep them from seeing your glow. I take it as my example of a thermal camera, but it is a zombie life force camera instead of seeing heat.
Also people can be seen through cloth and similar. It has to be fairly light proof/thick. Like maybe a heavy tarp completely concealing you may be enough. Certainly enough to dampen/muffle the light unless they are close.

1. It is the PPE that they sense. It's what they feed on.
2. Yes, the thermal image is probably the best description. If you're in a room, Zs can sense you're in there, but can't pinpoint, as stated before. It's the PPE they're sensing. PPE is kind of a source of life. Think of it, when you're in that circumstance, that they can 'smell' you. Or even think of it as a 6th sense.
3. If a Z is in direct combat, it'll attack the person it's in combat with. If not, it will go after the person with the highest PPE, ie; a child. They bypass livestock because of the low PPE they emit, and go straight for humans. They do however attack animals if they're hungry enough.
