Which animals? And wasn't there a generic formula printed once that would allow us to do this for ourselves, kind of a reverse engineering of what the average height/length & weight of an animal is?

just wondering because i made stats for them a back when i got the new AtB, and i'm just sitting on them since i can't think of an article to do with them.
(though i'm tempted to create a whole slew of chimera's, and just do a "Creature compendium" type thing)

You want a Jackalope? Create a Chimera combining Rabbit DNA with Antelope DNA; treat it very much the way you would a rabbit, but allow the purchase of Antlers using BIO-E. It makes about as much sense as a velociraptor-ish Chicken Throwback...

Wow...how I missed 20 pages of the Rifter is beyond me. Having just read the article, I have to say my favorite is the Flydragon. Closely followed by the Earthworm (I think that Earthworm Jim video games are the reason I like the idea so much.)

I don't think the chimeras are set up quite the way your envisioning them. It's not a system of picking two or more animals from the book and combining them into something altogether new. The choices for chimeras have already been predetermined and are laid out on AtB2.
