I am making up a character that has Hands: None but the Background/Education has "select 3 WP's" .
What would you do with skills that require hands in this case?
I think I'm just going to pick replacement skills, from the few areas that the character is already allowed to pick skills from.
This character is a mutant dog, Weirmeriner, no looks, no hands, no stance, partial speach. I've boosted his size lvl from 6 to 10 added ex running, Brute Strength, Internal compass and mental speak. His education is frontier, needless to say I'll be doubling up on the 8 secondary skills he gets.
He's going to be partnered up with a smaller character that has full hands/stance and more tech skills. Maybe a squirrel or a small dog that uses the big guy as a mount.
Also, I keep having this idea of a transport wagon being pulled by a team of intellegent draft animals. Or at least one in the lead....
Has anyone seen a lot of no hands mutants, or do most players choose at least partial hands and stance?

Generally, inapplicable skills are simply discarded. If you have a generous GM, you might be able to trade the W.P. skills for something more appropriate to the character.

Nope, no GM.... Though I am in a PbP game with Rali.....Kind of. I just wanted to make the characters up and haven't run across that problem before.
As it is, I figured that the time the character would have spent to learn the inapplicable skills would then be used to learn something he could use. As it is I've got him doubling up on several Domestic skills to get the +10% bonus.
And, um, okay, Where is the Hunting skill listed?

Every game but AtB2, apparently
The skill doesn't actually do anything on its own, it just provides rather measly bonuses to various skills involved in hunting (prowl, track animals, etc.). Exactly which skills and what bonuses depend on which book you take it from.
