You might consider giving a look to Rifts Japan, particularly for ninja's and samurai, but also for other fighting characters such as monks.

Palladium Fantasy gives fighting monks and gladiators (see Adventures on the High Seas). You might also look at the Paladin.

I find the versions of the martial arts as presented in Rifter to be a little over-powered in comaprison to the styles as presented in N&SS and Mystic China.
Too many moves, too many special moves, and overly generous bonuses (in general).
However, they are also easily modifed to be more workable to an N&SS game, so they are not without merit.
I do applaud the attention to martial arts from beyond the East Orient.
