In modern animal processing very little is ever wasted. Meat, hides, fat, hooves, bones, all have a monetary value and are saved. There's even a product called "mechanically separated meat" which is exactly what it sounds like, where a machine removes all the little bits and pieces of meat from the leftover parts. This makes up about 20% of a hotdog in case you were wondering. We may be wasteful as a society, but our industries will squeeze every available penny out of a resource to maximize profits.

And while there are different breeds of dairy cattle and beef cattle, when a dairy cow is no longer profitable it is processed just like a beef cow. Most dairy cattle bulls end up being sold for meat. Only the best are saved as breeding stock, the rest are castrated to mellow their temperament (a bull raging on testosterone can be quite dangerous) until they are of sufficent size for processing.

actually, it's implied that such people still exist. it's just not possible to actually play one.
