Fair to the players, NPCs, and game system (I'm writing my own game, so I show respect to those who have gone before by using their games' rules). It's also fair to the players, especially the ones who have played before and have moved to my area; if they know how the world works from the get-go, they can enjoy it more quickly when I run. The NPCs catch the same "breaks" as the PCs. And I never fudge on a die-roll or anything else.
Story-and-character-driven. I don't rail-road, I present choices and am prepared to go with them... even though I'm winging it 70% of the time.
Fun is the next buzz-word, since I've never had any real complaints aside from occasionally throwing a scoche more at the PCs than they think they can handle. But since getting by just barely can be tense in a fun way, well...
Variety is definately the next big key-word, since I allow anything the books do (but if you want to play a Cosmo-Knight, I do make you start out as a Fallen and earn your way back so I know you will be cool with that much power).
Eyes without life, maggot-ridden corpses, mountains of skulls... these are a few of my favourite things.

Seriously... if you'd have to use 3 or 4 buzzwords to describe how your preferred style of referreeing a game differs from other GMs - what would they be?

Not sure where we' re going but it will be a fun ride getting there.

We had real books not PDFS and we carried them on carts we pulled ourselves that we built by hand. We had Thaco and we were happy. If we needed dice we carved ours out of wood. Petrified wood just because we could.

"Why open it when you can blast it in?"

"If its not on paper, you don't have it."
