The Mystic China book containes the Taoist Immortal Class (it is not an OCC, its more like when a char is raised to DemiGod-hood), along with some false paths to immorality (again, these are not OCCs but change of race).

As a preemptive comment here, the 2 China books mention that magic is usually only the purview of a few people looking for immortality. It doesn't give you any more information then that, but that O.C.C. is the Geo-Immortal, found in the Nightbane WB: 2. Also, Rifts China 2 has a mystic class.
That's it.
Oh, and the demons. All the demons know some spells.
Maybe the dragons, but they're eastern dragons, and snooty. If you refuse to take off your shoes when you raid their lair, they won't eat you.

That information was advertised to have been included in Mystic China 3, which was going to have a full playable writeup.
Sadly, with Eric's death it will likely never see the light of day, so the notes in Mystic China are all there will be.
And no Mystic China 2 for more information their either.
